Every day, Hanoian’s kitchen starts early in the morning. The chef goes to the market, chooses each fresh fish, piece of lean shoulder meat, and bunch of green vegetables.
All ingredients are carefully selected and fresh on the day — because “only when the ingredients are good will the dish have soul”.

The cooking method here is still my mother’s and grandmother’s cooking method— braised in a clay pot, simmered over low heat, simmered slowly to retain the natural sweetness. Standard Northern spices: dried onions, galangal, ginger, fish sauce – fragrant but light, fatty but not greasy.

Each dish is a slice of old Hanoi memories:

  • Braised fish with galangal and melon— fragrant, firm, sweet and salty blend.
