Of the three dishes, duck bamboo shoot vermicelli is ranked highest by Taste Atlas, ranking 15th. This familiar dish scores points for its clear and sweet broth, distilled from duck bones, mixed with the delicate taste of fresh or dried bamboo shoots. The duck meat is soft and fragrant, served with white vermicelli, creating an attractive culinary flavor.

Taste Atlas compares duck bamboo shoot vermicelli as “a symbol of sophistication in Vietnamese cuisine”, because of the care in handling rustic ingredients: the bamboo shoots must be crispy, the duck must be fragrant, the broth must be clear, everything blends together naturally.

For many international tourists, this is a delicious and suitable dish for both breakfast and lunch, reminding them of the simplicity but sophistication of Vietnamese cuisine.

Besides, duck porridge brings a soft, warm and familiar feeling, reminiscent of family, childhood and peace, just like the word “comfort food” that foreigners describe. A pot of porridge simmered from rice, mixed with soft boiled duck meat, creates a bowl of smooth porridge. The warm taste of ginger and the sweet and salty taste of ginger sauce make the dish a favorite choice of many people.

For tourists, duck porridge represents the “rustic but lasting” spirit, the spirit that has created the identity of Vietnamese cuisine.

If duck bamboo shoot vermicelli and duck porridge are easy to enjoy dishes, duck blood pudding makes many tourists curious or wary. Taste Atlas ranked this dish at number 40, calling it a “bold dish, reflecting a part of Vietnamese culinary culture”.

Blood pudding is made from fresh duck blood mixed with fish sauce, mushrooms and fillings from liver, tripe, minced meat, served with herbs, roasted peanuts and rice paper. It is the strong, typical local flavor that makes the dish special on the world culinary map.

Although it has received many mixed reviews in the past due to hygiene concerns, the presence of duck blood pudding in this ranking shows how Taste Atlas recognizes the dish as a unique cultural mark.

Launched in 2015, the Taste Atlas website is considered a global culinary map, connecting more than 9,000 restaurants and introducing tens of thousands of dishes through reviews of experts, chefs and readers.
